Potato Apple salad with Mango Curry dressing
Ingredients
4 medium-size potatoes, rinsed and coarsely diced
1 granny smith (or other crisp) apple, cored and diced
2 stalks of celery, finely diced
1⁄2 recipe prepared Mango Curry Dip
3 tbsp Mango Curry Dip Mix
1 cup plain yogurt or light sour cream
1 cup light mayonnaise
juice from half a lemon, optional
sesame seeds, to taste
Sea Salt, to taste
Black Pepper, to taste
Preparation
Place potatoes in a Multipurpose Steamer with lid, and cook on high for 5–6 minutes, or until tender. Let cool.
Combine potatoes with the next three ingredients, sprinkle with sesame seeds and season to taste. Serve immediately, or chill until ready to serve.
