Pork Tenderloin and Broccoli Stir-Fry
Broccoli is a source of vitamins A, E, C and selenium – noted for its anti-cancer properties.
Ingredients
1 (12 oz/375 g) pork tenderloin
1 tbsp vegetable oil
4 cups chopped broccoli florets
1 bell pepper
1 tbsp Asian Stir-Fry Seasoning
1 cup beef broth
1 tbsp cornstarch
Preparation
Slice pork in half lengthwise, then thinly slice each half into strips.
Heat oil in Wok. Add pork and stir-fry for 2–3 minutes, until golden. Remove and set on a plate.
Add broccoli, pepper and Asian Stir-Fry Seasoning to wok. Drizzle with a little water; cover and steam for 2 minutes, until tender-crisp. Meanwhile, stir beef broth with cornstarch.
Return pork to wok and pour beef broth mixture overtop. Simmer, uncovered, for 1 minute, until sauce is thick.
