Popcorn Chicken Nourish Bowl
Ingredients
3 cups shredded purple cabbage
1 cup cooked grains, such as mixed rice or bulgur
1 cup julienned carrots
1 cup julienned zucchini
1⁄4 recipe prepared Popcorn Chicken Bites
2 lbs (900 g) boneless, skinless, chicken breasts, cut into chunks
1 tbsp oil
1 pkg Southern Baked Gluten Free Crumb Mix
1⁄2 avocado, coarsely mashed
2 tbsp prepared dressing, your choice
Better Than Bacon Topper, to taste, optional
Preparation
Arrange first five ingredients in two bowls.
Dollop avocado on top; drizzle with dressing.
Shake on Nutritional Yeast Topper.
