Ingredients

  • 3 cups shredded purple cabbage
  • 1 cup cooked grains, such as mixed rice or bulgur
  • 1 cup julienned carrots
  • 1 cup julienned zucchini
  • 14 recipe prepared Popcorn Chicken Bites
  • 2 lbs (900 g) boneless, skinless, chicken breasts, cut into chunks
  • 1 tbsp oil
  • 1 pkg Southern Baked Gluten Free Crumb Mix
  • 12 avocado, coarsely mashed
  • 2 tbsp prepared dressing, your choice
  • Better Than Bacon Topper, to taste, optional

Preparation

  1. Arrange first five ingredients in two bowls.
  2. Dollop avocado on top; drizzle with dressing.
  3. Shake on Nutritional Yeast Topper.
