Poke-Inspired Bowl
Poke bowls are traditionally served using raw tuna. This recipe uses canned tuna so you can enjoy this dish any time of the year— even if you do not have access to fresh tuna.
Ingredients
1 cup rice
2 cups water
1 tbsp Asian Stir Fry Seasoning
1⁄4 cup mayonnaise
1 tbsp lime juice
2 tsp low-sodium soy sauce
2 cups cucumber, sliced
1 bell pepper, sliced
2 cups coleslaw mix
1⁄2 avocado, sliced
450 g light, canned tuna, or 2 cups edamame, shelled
hot sauce, optional
Preparation
In a Round or Multipurpose Steamer, add rice and water; cook on high for 8–10 min.
While rice is cooking, combine sauce ingredients in a small bowl. Set aside.
Prep veggies.
Assemble 4 bowls with rice, veggies and tuna. Serve with sauce and hot sauce, if desired. Enjoy!
