Ingredients
  • 1 cup basmati rice

  • 2 cups + 1 tbsp water

  • 1 tbsp Nourish Broth Mix or Vegetable Broth Mix

  • 1 pack Crispy & Crunchy Lettuce Wrap Seasoning or Chicken Fried Rice Seasoning

  • 1 lb (450 g) plant-based meat substitute

  • 2 cups diced bell peppers

  • 1 cup diced frozen mangoes

  • 1 tsp sesame oil

  • 1 tsp low-sodium soy sauce

  • 1 large head iceberg lettuce

Instructions
  • In Multipurpose Steamer, place rice, 2 cups water and broth mix; cover. Microwave 6 min, then set aside in a separate bowl.

  • In Multipurpose Steamer, place seasoning, meat substitute, peppers, mangoes, remaining 1 tbsp water, sesame oil, and soy sauce. Gently mix to combine. Microwave, 6 min.

  • Meanwhile, cut lettuce into four wedges, remove stem ends and gently peel the wedge leaves off two at a time to create strong, sturdy, crunchy boats for your filling.

  • Layer rice, then protein mixture on lettuce. Top with extra toppings, if desired.
