Pesto Salsa Chicken

Ingredients

  • 1 tbsp butter
  • 2 boneless, skinless chicken breasts
  • 12 cup orange juice
  • 2 tbsp Poco Picante Salsa, prepared
  • 2 tbsp Poco Picante Salsa Mix
  • 1 cup diced tomatoes
  • 1 tsp lime juice, optional
  • cilantro, optional
  • 2 tsp Pesto Sauce Mix

Preparation

  1. Melt butter in a frying pan over medium heat. When butter is bubbling, add chicken breasts and cook 4 minutes per side until golden brown.
  2. Pour in orange juice, Salsa and Pesto Herb Mix and simmer for 10 minutes, until chicken is fully cooked.
