Pesto Pasta Primavera

We’re putting homemade pesto front and centre, right where it belongs! This dish gets “fresh” with a medley of colourful, vibrant, garden goodies. Swap in whatever veggies showcase the best of what’s in season, or even lean on your trusty, frozen faves like broccoli, peppers, and squash.

Ingredients

  • 2 cups bite-size pasta, your choice
  • 1 zucchini, green or yellow
  • 12 small red onion
  • 1 cup cherry tomatoes
  • 1 cup frozen peas
  • 12 cup prepared Super Green Pesto
  • Salt & pepper, to taste

Preparation

  1. Cook pasta according to package directions. Drain.
  2. While pasta is cooking, thinly slice zucchini into half-moons. Thinly slice onion and halve tomatoes.
  3. Place zucchini, onion, and peas in Multipurpose or Round Steamer. Cover; microwave on high 2 min. Remove from microwave and stir in tomatoes. Cover; microwave 2–3 min, or until veggies are tender.
  4. Add cooked pasta and pesto to steamer with veggies; stir to combine. Season with salt and pepper.
