Ingredients

  • 1 cup prepared Pesto Sauce
  • 2 tbsp Pesto Sauce Mix
  • 2 tbsp water
  • 2 tbsp pine nuts or pistachio nuts, optional
  • 1 tbsp grated Parmesan cheese
  • 14 cup olive oil
  • 1 lb (450 g) linguine pasta, or gluten-free pasta
  • 2 cans (5 oz/280 g) light tuna
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 1 can (14 oz/398 ml) low-sodium diced tomatoes
  • 12 cup grated parmesan cheese, optional

Preparation

  1. In a Multipurpose Pot, cook linguine, according to instructions, drain reserving some of the pasta water.
  2. Heat a frying pan over medium heat, add the tuna, Salt and Pepper, tomatoes and their juices and then simmer for 5 minutes. Stir in prepared sauce. Toss linguine with the sauce, and add a little hot reserved pasta water if required.
  3. Sprinkle pasta with parmesan if desired.
