Peach and Tomato Salsa
Ingredients
1 cup finely diced peaches
2 tbsp Poco Picante Salsa Mix
1 cup diced tomatoes
cilantro, optional
Sea Salt
squeeze of lemon juice, optional
Preparation
Sprinkle peaches with Salsa Mix and cilantro, if desired.
Coarsely mash, then stir in tomatoes and a minced shallot, if desired.
Season with Sea Salt and a squeeze of lemon juice.
Refrigerate 1 hour before serving.
