Peach and Ginger Chicken with Couscous
Couscous is a quick and easy side dish. For a flavour burst, add your favourite Epicure Herb & Spice blend, or Epicure Tea, when boiling couscous.
Ingredients
4 boneless, skinless chicken breasts
1 cup drained canned peach slices, juice reserved
1 tsp cornstarch
1⁄4 tsp ginger (ground)
1⁄4 tsp Apple Pie Spice
1⁄2 cup water chestnuts, sliced
2 cups cooked whole-wheat couscous
Preparation
Cook chicken in frying pan over medium heat for 8 – 10 minutes, or until brown. Place on a plate and set aside.
Add enough water to peach juice to make 1⁄2 cup. Pour into pan, stir in cornstarch and ginger. Cook over medium-low heat, stirring frequently for approximately 5 – 7 minutes, until thickened and bubbly. Stir for an additional minute.
Add peaches, chicken, Apple Pie Spice, and water chestnuts. Heat thoroughly and serve over couscous.
