Pea & Ricotta Tartine
A tartine is an elegantly topped, open-faced French sandwich.
Ingredients
4 slices bread, your choice, cut from a round loaf
2 cups peas
1⁄2 cup ricotta
1 tbsp 3 Onion Dip Mix or Toasted Onion
Pesto Sauce, prepared, to taste
2 tbsp Pesto Sauce Mix
2 tbsp water
2 tbsp pine nuts or pistachio nuts, optional
1 tbsp grated Parmesan cheese
1⁄4 cup olive oil
Black Pepper, to taste
Preparation
Preheat oven to 375° F (190° C).
Place bread on a crisper. Toast for 5 minutes, flipping halfway through.
With a fork, mash peas, ricotta, and seasoning into a chunky blend.
To assemble, spread pea mixture on toasts. Drizzle with Pesto Sauce and a sprinkle of pepper.
