A tartine is an elegantly topped, open-faced French sandwich.

Ingredients

  • 4 slices bread, your choice, cut from a round loaf
  • 2 cups peas
  • 12 cup ricotta
  • 1 tbsp 3 Onion Dip Mix or Toasted Onion
  • Pesto Sauce, prepared, to taste
  • 2 tbsp Pesto Sauce Mix
  • 2 tbsp water
  • 2 tbsp pine nuts or pistachio nuts, optional
  • 1 tbsp grated Parmesan cheese
  • 14 cup olive oil
  • Black Pepper, to taste

Preparation

  1. Preheat oven to 375° F (190° C).
  2. Place bread on a crisper. Toast for 5 minutes, flipping halfway through.
  3. With a fork, mash peas, ricotta, and seasoning into a chunky blend.
  4. To assemble, spread pea mixture on toasts. Drizzle with Pesto Sauce and a sprinkle of pepper.
