For a delicious quick meal using up extra chicken parm, look no further!
Ingredients
1 recipe prepared Chicken Parmesan
1⁄2 pkg regular or gluten free breadcrumbs
2 tbsp grated Parmesan cheese
1 tbsp 3 Onion Dip Mix
Sea Salt, if desired
Black Pepper, if desired
2 tbsp olive oil
1 lb (450 g) boneless, skinless chicken breasts
1 1⁄2 cups Marinara Sauce
1 can (28 oz/796 ml) diced tomatoes
1 can (28 oz/796 ml) crushed tomatoes
3 tbsp Marinara Sauce Mix
1 cup grated mozzarella cheese
1 cup 3 Onion Dip, prepared
3 tbsp 3 Onion Dip Mix
1 cup sour cream or plain yogurt
1 cup mayonnaise
6 (8 in/20 cm) whole-wheat or multi-grain sub buns, cut in half lengthwise
2 cups Romaine lettuce leaves, washed and dried
1 red bell pepper, sliced into strips
Preparation
Preheat oven to 300° F (150° C).
Slice chicken into strips. Place in frying pan, and stir in sauce. Reheat in oven until warm, approximately 10 minutes.
Meanwhile, spread 3 Onion Dip on both sides of each sub. Arrange Romaine and peppers on each.
Top each with 3 - 4 chicken strips. Dollop sauce overtop. Cut in half, and arrange on a platter.
