Parmesan Chicken Subs

Ingredients
  • 1 recipe prepared Chicken Parmesan

  • 12 pkg regular or gluten free breadcrumbs

  • 2 tbsp grated Parmesan cheese

  • 1 tbsp 3 Onion Dip Mix

  • Sea Salt, if desired

  • Black Pepper, if desired

  • 2 tbsp olive oil

  • 1 lb (450 g) boneless, skinless chicken breasts

  • 1 12 cups Marinara Sauce

  • 1 can (28 oz/796 ml) diced tomatoes

  • 1 can (28 oz/796 ml) crushed tomatoes

  • 3 tbsp Marinara Sauce Mix

  • 1 cup grated mozzarella cheese

  • 1 cup 3 Onion Dip, prepared

  • 3 tbsp 3 Onion Dip Mix

  • 1 cup sour cream or plain yogurt

  • 1 cup mayonnaise

  • 6 (8 in/20 cm) whole-wheat or multi-grain sub buns, cut in half lengthwise

  • 2 cups Romaine lettuce leaves, washed and dried

  • 1 red bell pepper, sliced into strips

Instructions
  • Preheat oven to 300° F (150° C).

  • Slice chicken into strips. Place in frying pan, and stir in sauce. Reheat in oven until warm, approximately 10 minutes.

  • Meanwhile, spread 3 Onion Dip on both sides of each sub. Arrange Romaine and peppers on each.

  • Top each with 3 - 4 chicken strips. Dollop sauce overtop. Cut in half, and arrange on a platter.
