1⁄3 recipe prepared Parmesan and Herb Mustard Chicken
3⁄4 cup dry breadcrumbs
1⁄4 cup grated Parmesan cheese
1 tbsp Pesto Sauce Mix
2 tbsp Dijon-style mustard
6 boneless, skinless chicken breasts
4 tsp Dijon-style mustard
8 slices whole-grain bread
4 slices low-fat Swiss or mozzarella cheese
4 romaine lettuce leaves
Sea Salt, to taste
Black Pepper, to taste
Preparation
Thinly slice chicken and set aside.
Spread mustard on each slice of bread. Add chicken, Swiss or mozzarella, and lettuce. Season with Sea Salt and Pepper. Top with second bread slice, cut in half and serve.
