Orange-cranberry Chicken

This bright, elegant chicken dish is just right for winter dinners. Ready in just 20 minutes.

Ingredients

  • 1 orange
  • 2 tsp butter
  • 6 skinless, boneless chicken breasts
  • 12 cup Nourish Broth
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 34 cup cranberry sauce
  • 1 green onion, diced — optional

Preparation

  1. Grate 1 tsp peel from orange and cut remaining peel from orange. Cut out fruit segments. Discard pits and pith.
  2. Melt butter in frying pan over medium-high heat. Add chicken. Cook for 3–4 minutes per side, until golden. Remove to plate.
  3. Pour Nourish Broth into pan. Add cranberry sauce and orange peel and stir until well-combined.
  4. Return chicken to pan. Cover and cook, stirring and turning occasionally, for 6–10 minutes, until chicken is cooked through. Garnish with orange segments and green onion.
