One-Pot Tomato Sausage Penne

Ingredients

  • 1 lb (450 g) Italian sausage, cut into small pieces
  • 4 cups penne noodles, uncooked
  • 1 can (28 oz/796 ml) diced tomatoes
  • 2 tbsp Marinara Sauce Mix
  • 1 tbsp Vegetable Seasoning
  • 5 cups warm water
  • 1 - 2 zucchinis, sliced into thin rounds
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. In a large pan, cook sausage over medium-high heat for 4 minutes or until browned and almost cooked through.
  2. Add penne, tomatoes, seasonings, and water to pan and bring to a boil over high heat. Stir frequently for 15 minutes, until pasta is cooked and liquid has evaporated enough to make a loose sauce.
  3. Stir in zucchini and cook for 1 more minute to soften.
  4. Season to taste and serve.
