1 lb (450 g) Italian sausage, cut into small pieces
4 cups penne noodles, uncooked
1 can (28 oz/796 ml) diced tomatoes
2 tbsp Marinara Sauce Mix
1 tbsp Vegetable Seasoning
5 cups warm water
1 - 2 zucchinis, sliced into thin rounds
Sea Salt, to taste
Black Pepper, to taste
Preparation
In a large pan, cook sausage over medium-high heat for 4 minutes or until browned and almost cooked through.
Add penne, tomatoes, seasonings, and water to pan and bring to a boil over high heat. Stir frequently for 15 minutes, until pasta is cooked and liquid has evaporated enough to make a loose sauce.
Stir in zucchini and cook for 1 more minute to soften.
