Nourish Bowl
A fresh and delish raw bowl of nourishment. Perfect on those days where you want a little of everything.
Ingredients
1 large sweet potato, diced, cooked
2 cups cooked quinoa
4 cups broccoli, carrot, or cabbage slaw
4 cups mixed greens
1 1⁄2 cups Creamy Garlic Hummus
1 can (19 oz/540 ml) chickpeas
3 tbsp Creamy Garlic Hummus Dip Mix
3 tbsp lemon juice, about 1 lemon
3 tbsp tahini, optional
1 cup low-fat cheese, cubed
1⁄2 cup Pesto Sauce
2 tbsp Pesto Sauce Mix
2 tbsp water
2 tbsp pine nuts or pistachio nuts, optional
1 tbsp grated Parmesan cheese
1⁄4 cup olive oil
Preparation
Arrange first six ingredients amongst four bowls. Drizzle each with sauce. Serve.
