A fresh and delish raw bowl of nourishment. Perfect on those days where you want a little of everything.

Ingredients

  • 1 large sweet potato, diced, cooked
  • 2 cups cooked quinoa
  • 4 cups broccoli, carrot, or cabbage slaw
  • 4 cups mixed greens
  • 1 12 cups Creamy Garlic Hummus
  • 1 can (19 oz/540 ml) chickpeas
  • 3 tbsp Creamy Garlic Hummus Dip Mix
  • 3 tbsp lemon juice, about 1 lemon
  • 3 tbsp tahini, optional
  • 1 cup low-fat cheese, cubed
  • 12 cup Pesto Sauce
  • 2 tbsp Pesto Sauce Mix
  • 2 tbsp water
  • 2 tbsp pine nuts or pistachio nuts, optional
  • 1 tbsp grated Parmesan cheese
  • 14 cup olive oil

Preparation

  1. Arrange first six ingredients amongst four bowls. Drizzle each with sauce. Serve.
