Spicy chicken sandwiches are trending! Fast food joints everywhere seem to be adding them to their menu. We’ve got you covered with a healthier version to make at home. The coating mix is crispy, gluten-free, and packs a spicy punch, with a hint of sweetness. These sammies have more protein, less sodium, and less fat than take-out. Top them with sliced pickles for the ultimate crunch and tang.

Ingredients

  • 1 egg
  • 1 lb (450 g) chicken breast fillets
  • 1 pkg Nashville Hot Chicken Sandwich Seasoning
  • 1 tbsp oil
  • 4 buns
  • 14 cup mayonnaise

Preparation

  1. Preheat oven to 400˚ F. Line Sheet Pan with Sheet Pan Liner.
  2. In a large bowl, beat egg. Add chicken; toss to coat.
  3. Place seasoning in a shallow dish. Add chicken strips, one at a time, using tongs, toss to evenly coat. Place chicken strips on pan.
  4. In a small bowl, add oil. With a basting brush, lightly dab oil onto coated chicken strips. Bake 18–20 min, or until cooked through.
  5. Split and toast buns. To assemble sandwiches, spread buns with 1 tbsp mayo per sandwich. Divide chicken strips between buns. Top with sliced pickles, if desired.
