Mozzarella and Tomato Antipasti

This is great as an appetizer, a salad, or can be served in a crusty roll as a delicious sandwich.

Ingredients

  • 3 tbsp olive oil
  • 2 tsp Pesto Sauce Mix
  • 4 large tomatoes
  • 34 lb (340 g) mozzarella cheese or bocconcini cheese
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Whisk together olive oil and sauce mix and allow to sit for at least 10 min.
  2. Carefully slice tomatoes and mozzarella cheese into approximately 1⁄4" thick slices.
  3. On a decorative platter, alternate overlapping slices of tomato with mozzarella cheese. Drizzle prepared olive oil mixture over top and season with salt and pepper. Serve immediately.
