Moroccan Green Couscous Salad

A delicious Moroccan dish that's ready in under 20 minutes!

Ingredients

  • 1 tbsp olive oil
  • 1 bell pepper, chopped
  • 1 green zucchini, sliced
  • 12 bunch asparagus, chopped
  • 2 cups couscous
  • 2-3 tsp Za'atar Seasoning, or Spinach Dip Mix
  • 2-3 tsp Herb & Garlic Dip Mix
  • 2 cups Vegetable Broth
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 lemon
  • 14 cup chopped fresh cilantro, optional

Preparation

  1. Heat oil in a large frying pan over medium-high heat.
  2. Add pepper, zucchini and asparagus. Stir-fry vegetables for 2 minutes, until tender-crisp.
  3. Stir in couscous and seasonings. Pour in Vegetable Broth and stir to evenly mix.
  4. Bring to a boil, then cover and remove from heat. Let stand 5 minutes, then squeeze in juice from lemon and fluff with a fork.
  5. Sprinkle with cilantro, if desired.
