Moroccan Couscous Salad

Ingredients

  • 1 small onion, finely chopped
  • 1 small lemon, divided – juice 1/2, mince 1/2
  • 1 tsp Sea Salt, freshly ground
  • 2 tbsp fresh lemon juice
  • 1 cup raw couscous, cooked and cooled
  • 1 tbsp Roasted Garlic Aioli Mix or Creamy Garlic Hummus Dip Mix
  • 1 tsp Za'atar Seasoning or Shish Kebab Seasoning
  • 1 medium carrot, finely chopped
  • 1 cup chopped dried apricots, dates, and prunes
  • 1 cup green olives, pitted and chopped
  • 14 cup olive oil
  • 2 tbsp chopped fresh parsley, optional
  • Sea Salt, to taste
  • Black Pepper, freshly ground, to taste

Preparation

  1. In a large bowl, marinate onion and lemon mince in lemon juice and Salt, approximately 5 minutes.
  2. Add remaining ingredients, and toss to combine.
  3. Season with Salt and Pepper, and serve at room temperature.
