Ingredients
1 small onion, finely chopped
1 small lemon, divided – juice 1/2, mince 1/2
1 tsp Sea Salt, freshly ground
2 tbsp fresh lemon juice
1 cup raw couscous, cooked and cooled
1 tbsp Roasted Garlic Aioli Mix or Creamy Garlic Hummus Dip Mix
1 tsp Za'atar Seasoning or Shish Kebab Seasoning
1 medium carrot, finely chopped
1 cup chopped dried apricots, dates, and prunes
1 cup green olives, pitted and chopped
1⁄4 cup olive oil
2 tbsp chopped fresh parsley, optional
Sea Salt, to taste
Black Pepper, freshly ground, to taste
Preparation
In a large bowl, marinate onion and lemon mince in lemon juice and Salt, approximately 5 minutes.
Add remaining ingredients, and toss to combine.
Season with Salt and Pepper, and serve at room temperature.
