Morning Glory Muffins

Stir your favourite fillings into these muffins. Try fresh or frozen fruit or berries, pumpkin seeds, millet, or raisins. The options are endless! Make a large batch of muffins and freeze them to have a “grab-and-go” breakfast ready for the whole week.

Ingredients

  • 2 eggs
  • 1 cup unsweetened apple sauce
  • 12 cup oil
  • 1 pkg Morning Glory Muffin Mix

Preparation

  1. In a large bowl, whisk eggs, apple sauce, and oil. Add mix; whisk until well combined.
  2. Divide batter into cavities of 2 lightly oiled Muffin Makers.
  3. In 2 batches, microwave on high 2 1⁄2 min. Rest in pan 5 min; invert onto wire rack to cool. Or, bake in preheated 375° F oven for 15–18 min, or until toothpick comes out clean. Cool in pan 10 min; unmold.
