Mocha Icing

Ingredients

  • 1 23 cups icing sugar
  • 2 tbsp cocoa powder
  • 1 cup butter, at room temperature
  • 1 pinch of salt
  • 3 tbsp hot coffee, preferably ethically sourced
  • 1 tsp vanilla extract

Preparation

  1. Whisk icing sugar and cocoa powder and cream with butter.
  2. Slowly beat in hot coffee for approximately 2 minutes, or until glossy.
  3. Stir in vanilla extract and immediately spread over cooled cake.
