This is the type of leftovers meal that you’ll love so much, you’ll be planning for leftovers...just so you can make it! And that’s not hard to do, considering one pulled pork recipe makes 20 servings. So go on, make some pulled pork and look forward to mini tortilla pizzas the next day.
Ingredients
8 corn tortillas
1 cup Poco Picante Salsa, prepared
2 tbsp Poco Picante Salsa Mix
1 cup diced tomatoes
1 tsp lime juice, optional
cilantro, optional
1 cup Slow Cooker Pulled Pork
1 pkg Pulled Pork Seasoning
1 cup ketchup
1⁄2 cup vinegar
1⁄2 cup brown sugar
1⁄4 cup water
5 lbs (2.5 kg) boneless pork shoulder or butt roast
1 cup low-fat shredded cheese, your choice
Preparation
Preheat oven to 350° F (175° C).
Place tortillas on a parchment-lined Sheet Pan. Top with 1 tbsp Salsa, 2 tbsp Pulled Pork and 1 tbsp cheese.
Bake for 3–5 minutes, until cheese melts and tortillas are golden. Serve.
