Middle Eastern Couscous

A fast side inspired by Middle Eastern sweet and savoury flavour.

Ingredients

  • 1 12 cups Nourish Broth or Vegetable Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 cup frozen mixed vegetables
  • 2 tbsp raisins
  • 1 tsp Curry Seasoning
  • 2 tsp Apple Pie Spice
  • 1 cup regular couscous or Israeli couscous

Preparation

  1. In a Multipurpose Pot, bring broth to a boil.
  2. Add vegetables, raisins, curry, and Apple Pie Spice. Simmer for 2 minutes.
  3. Stir in couscous. Remove from heat, cover, and let stand 5 minutes. Fluff with a fork and serve.
