Mexican Street Corn

Mexican street corn (a.k.a. “Elotes”) is a bold way to grill corn! Get a good char on the kernels before slathering with a cheese-spiked sauce and lots of fresh lime. Traditional recipes use mayo, spices, and Cotija cheese. Streamline and use Cheesy Fries Seasoning as the base and swap mayo for protein-rich Greek yogurt.

Ingredients

  • 4 large corn cobs, husks removed
  • 3 tbsp plain 2% Greek yogurt or mayonnaise
  • 3 tbsp sour cream
  • 1 tbsp Cheesy Fries Seasoning or Lemon Pepper Seasoning
  • 1 lime

Preparation

  1. Preheat grill to medium-high.
  2. Place corn on grill; cover and barbecue 10–15 min, turning often, until kernels are lightly charred.
  3. Meanwhile, in a bowl, whisk yogurt, sour cream, and seasoning. Slice lime and squeeze juice into bowl.
  4. Using Basting Brush, generously brush grilled corn with sauce. Sprinkle with toppings, if desired.

Tips

To save time, precook corn in the microwave! Place the unshucked cobs in Multipurpose Steamer, cover, and microwave on high for 5 min before grilling. Using oven mitts, gently grip tip of corn with one hand and squeeze. It will cleanly pop out of husks, leaving the sticky, silky threads behind. Then, quickly char on the grill!
