A Mexican twist on the classic bruschetta. Perfect for a Mexican fiesta or potluck.
Ingredients
12 slices French baguette
1 cup diced tomatoes, drained
1 tbsp Poco Picante Salsa Mix
1⁄3 cup Monterey Jack cheese, shredded
Preparation
Preheat oven to broil. Lay baguette slices on Sheet Pan lined with Sheet Pan Liner, and lightly spray with olive oil. Broil 2 minutes per side, or until golden.
Combine tomatoes and Salsa Mix.
Spoon 1 tbsp onto baguette slices and top with Monterey Jack cheese.
