Mexican Macaroni and Cheese

Ingredients
  • 1 lb (450 g) lean ground beef

  • 1 14 cups macaroni

  • 1 pkg Mac & Cheese Seasoning

  • 2 tbsp milk

  • 1 can (19 oz/540 ml) low-sodium diced tomatoes

  • 2 tbsp Poco Picante Salsa Mix

  • 1 cup water

  • 1 tbsp Taco Seasoning

  • 1 cup grated low-fat cheddar cheese

Instructions
  • Brown beef in a frying pan.

  • Add macaroni, Mac & Cheese Seasoning, milk, tomatoes, Poco Salsa Mix, Taco Seasoning and water. Bring to a boil.

  • Reduce heat to medium and simmer for 10 minutes, stirring

  • Place in a serving bowl and top with cheddar. Serve warm.
