Mexican Macaroni and Cheese
A healthier alternative to pre-packaged foods, and ready just as quickly.
Ingredients
1 lb (450 g) lean ground beef
1 1⁄4 cups macaroni
1 pkg Mac & Cheese Seasoning
2 tbsp milk
1 can (19 oz/540 ml) low-sodium diced tomatoes
2 tbsp Poco Picante Salsa Mix
1 cup water
1 tbsp Taco Seasoning
1 cup grated low-fat cheddar cheese
Preparation
Brown beef in a frying pan.
Add macaroni, Mac & Cheese Seasoning, milk, tomatoes, Poco Salsa Mix, Taco Seasoning and water. Bring to a boil.
Reduce heat to medium and simmer for 10 minutes, stirring
Place in a serving bowl and top with cheddar. Serve warm.
