Mexican Frittata
Preparation
Dice pepper; place in Multipurpose Steamer. Cover; microwave on high until soft, 1 min.
Crack eggs into steamer; add egg whites and seasoning. Stir to mix; sprinkle cheese on top. Cover and microwave on high until eggs are set, 3−4 min. Let stand, covered, 1 min.
Meanwhile, cut avocado in half; discard pit. Scoop flesh into a bowl; add dip mix and lime juice. Using a fork or Ground Meat Separator, coarsely mash.
Cut frittata into squares and serve with guacamole.
