Mexican Fiesta Salad

A refreshing Mexican-inspired salad with avocados and fresh tomatoes.

Ingredients

  • 2 ripe avocados
  • 3 tomatoes, cut into wedges
  • 1 tbsp Guacamole Dip Mix
  • 2 tbsp olive oil
  • 2 limes, cut in half crosswise
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Score avocados in quarters lengthwise, and cut each in half lengthwise. Carefully remove pits, and peel off shells. Cut into wedges, and pile in the centre of a serving platter.
  2. Arrange tomatoes around avocado wedges.
  3. Sprinkle Guacamole Dip Mix overtop. Drizzle with oil and, using a 2-in-1 Citrus Press, juice limes overtop.
  4. Season with Salt and Pepper. Serve immediately – before avocados begin to brown.
