Mediterranean Slaw
Add some pep to your regular coleslaw routine! This colourful and crunchy slaw brings a Mediterranean flair to mealtime with dill, olive oil, and balsamic vinegar. Ingredients
1 tbsp Coleslaw Dressing Mix or Lemon Dilly Dip Mix
1⁄4 cup olive oil
2 tbsp balsamic vinegar
1 pkg (397 g/14 oz) coleslaw mix
1 English cucumber
1⁄2 head cauliflower
1⁄2 cup pumpkin seeds
Instructions
In a large bowl, whisk mix with oil and vinegar. Add coleslaw mix.
Using 4-in-1 Mandoline or box grater with large holes, shave cucumber and cauliflower into bowl.
Add pumpkin seeds and toss to combine.
