Mediterranean Slaw

Add some pep to your regular coleslaw routine! This colourful and crunchy slaw brings a Mediterranean flair to mealtime with dill, olive oil, and balsamic vinegar. Pre-shredded coleslaw saves you time and still gives you all the health benefits of cabbage, like Vitamin C and fibre. Pack it for your next picnic or BBQ potluck.

Ingredients
  • 1 tbsp Coleslaw Dressing Mix or Lemon Dilly Dip Mix

  • 14 cup olive oil

  • 2 tbsp balsamic vinegar

  • 1 pkg (397 g/14 oz) coleslaw mix

  • 1 English cucumber

  • 12 head cauliflower

  • 12 cup pumpkin seeds

Instructions
  • In a large bowl, whisk mix with oil and vinegar. Add coleslaw mix.

  • Using 4-in-1 Mandoline or box grater with large holes, shave cucumber and cauliflower into bowl.

  • Add pumpkin seeds and toss to combine.
