Mediterranean Meatballs Power Bowl
Not your grandma’s salad! This power bowl is packed with lean protein and tasty veggies to power you through your day, with herbaceous flavours that will have you coming back for more. Fennel has an anise flavour (think black licorice!) with vitamins and minerals that support heart health and reduce inflammation. And don't let beets’ earthy flavour deter you—this ruby red superfood is high in fibre, potassium, and anti-inflammatory nutrients.
Ingredients
1 lb (450 g) ground turkey or chicken
1 pkg Chicken Souvlaki Seasoning or Donair Seasoning
1 small fennel bulb
1 small beet
1⁄2 English cucumber
8 cups leafy greens, such as spring mix
1⁄4 cup Greek Dressing, or dressing of your choice
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
Preparation
In a large bowl, use a fork to combine ground turkey and seasoning. Form into 16 meatballs (about 2 tbsp each).
Arrange in a single layer in Round Steamer or Multipurpose Steamer (it’s okay if the meatballs touch each other). Cover and microwave on high for 4 min or until cooked through.
Thinly slice fennel and beet, and dice cucumber.
Divide leafy greens, fennel, beet, and cucumber between four bowls. Top each bowl with four meatballs. Drizzle with dressing.
