Mediterranean Fish Sticks
Another kid-friendly dinner! A delicious Mediterranean way to serve up heart-healthy fish. To get a high dose of Omega-3s use salmon as your fish of choice. Ready in just 25 minutes!
Ingredients
1 - 1 1⁄2 lbs (450 g - 675 g) fish fillet, such as halibut, salmon or catfish
1 recipe prepared Dillicious Tzatziki
1 cup 2% plain Greek yogurt
1 tbsp Lemon Dilly Dip Mix
1⁄2 English cucumber
Sea Salt, to taste
Black Pepper, to taste
2 cups crushed cereal, such as Cornflakes® or Special K®
Preparation
Preheat oven to 450° F (230° C).
Cut fish into 'fingers'. Spread half of the Tzaziki over fish, then evenly coat with cereal.
Place fish on Sheet Pan lined with Sheet Pan Liner. Bake for about 10 minutes (depending on thickness of fish), until topping is crunchy and fish is cooked through.
Serve with remaining Tzaziki for dipping.
