Ingredients
1 tbsp Pesto Sauce Mix
1 tbsp water
8 slices bocconcini cheese, about 4 oz/120 g
2 tbsp olive oil
4 medium-sized panini buns or chopped baguette
1 recipe prepared Classic Meatloaf, cooled and sliced
3 tbsp ketchup
1 tsp brown sugar
1 tsp honey mustard
1 pkg Classic Meatloaf Seasoning
1 lb (450 g) lean ground beef
1 egg
2 tbsp water
Preparation
In 4-Cup Prep Bowl, stir sauce mix with water and let stand 5 min. Meanwhile, cut each slice of cheese in half. To bowl, add olive oil. Whisk vigorously. Add cheese; gently toss to coat.
Slice buns open. Toast, if desired.
Fill each bun with meatloaf and cheese. Drizzle with any remaining pesto sauce.

Tips
Bocconcini are small mozzarella cheese balls. They come in different sizes and are delicious in salads. For this recipe, look for pre-sliced bocconcini (sometimes called medallion slices).
