Try this cool twist on a classic Caesar salad! Epicure’s Caesar Dressing is low in fat and calories compared to other Caesar dressings at the store, so you can enjoy its creamy, garlicky goodness totally guilt-free. Lettuce is full of vitamins to promote healthy skin, eyes, bones, and digestion, and the meatballs are a complete source of protein.

Ingredients

  • 1 head Romaine lettuce
  • 14 cup Caesar Dressing, prepared
  • 2 tbsp Caesar Dressing Mix
  • 2 tbsp light mayonnaise or Greek yogurt
  • 1 tbsp lemon juice
  • 14 cup olive oil
  • 14 cup milk, your choice
  • 2 crushed garlic cloves, optional
  • 12 Classic Meatballs
  • 1 egg, beaten
  • 1 pkg Crispy & Crunchy Coating Mix, or 1/2 cup breadcrumbs
  • 2 tbsp Marinara Sauce Mix or Pizza Seasoning
  • 1 lb (450 g) lean ground beef, chicken or turkey
  • Bett Thank Bacon Topper, to taste

Preparation

  1. Cut lettuce lengthwise into small wedges. Be sure to leave core intact so the wedges stay together.
  2. Arrange wedges on a platter. Top with warm Classic Meatballs.
  3. Drizzle with a few spoonfuls of Caesar Dressing then generously shake Better Than Bacon Topper overtop.
