Maple Miso Ribs

Combine the sweet crave of maple with the savoury magic of miso for a finger-licking, protein-packed treat. The Miso powder in the marinade mix is doing double duty: it enhances flavour and contributes to a healthy gut. For something a little saucier, top ribs with one of our prepared, savoury Sauces when they come off the grill!

Ingredients

  • 2 lbs (900 g) pork baby back ribs
  • 14 cup Maple Miso Marinade Mix or Asian Stir-Fry Seasoning, divided
  • 14 cup rice vinegar
  • 2 tbsp oil
  • 2 tbsp maple syrup

Preparation

  1. Preheat oven to 300° F. Place Cooling Racks on unlined Sheet Pan. Pour 1 cup water into pan.
  2. Rub both sides of ribs with 1 tbsp marinade mix each. Place ribs on racks and tightly cover pan with foil.
  3. Steam ribs in oven 1 1⁄2 hrs. Remove from oven.
  4. Preheat barbecue to medium-high heat.
  5. In a small bowl, whisk remaining 2 tbsp marinade mix with vinegar, oil, and maple syrup. Use half of the marinade to brush both sides of ribs.
  6. Grill ribs, with lid open, 2–3 min per side. Remove from grill and brush with remaining marinade.

Tips

Pork ribs will often have a tough membrane on the curved bone side of the rack. Remove it by grabbing one corner of the membrane with a paper towel and pulling it away from the bones.

No grill? Discard water from pan after steaming. Place ribs back on racks, brush with remaining marinade, and broil on top rack of the oven, 2–3 min per side.
