Your belly will dance with happiness when you eat this beautifully coloured nourish bowl.

Ingredients

  • 12 cup cooked couscous
  • 1 cup broccoli, carrot, or cabbage slaw
  • 1 cup mixed greens
  • 1 cup black beans, rinsed and drained
  • 13 cup cooked, diced sweet potato, optional
  • 14 cup Creamy Garlic Hummus, prepared
  • 1 can (19 oz/540 ml) chickpeas
  • 3 tbsp Creamy Garlic Hummus Dip Mix
  • 3 tbsp lemon juice, about 1 lemon
  • 3 tbsp tahini, optional
  • 14 cup Chipotle Aioli, prepared, optional
  • 1 tbsp Chipotle Aioli Mix
  • 1 cup light mayonnaise
  • 1 tsp lemon juice, optional

Preparation

  1. Place couscous in a serving bowl.
  2. Top with slaw, greens, and black beans. Add sweet potato, if desired.
  3. Top with hummus and aioli, if desired. Serve.
