Ingredients
  • 12 cup cooked couscous

  • 1 cup broccoli, carrot, or cabbage slaw

  • 1 cup mixed greens

  • 1 cup black beans, rinsed and drained

  • 13 cup cooked, diced sweet potato, optional

  • 14 cup Hummus, prepared

  • 2 - 3 tbsp Herb & Garlic Dip Mix

  • 1 can (19 oz/540 ml) chickpeas, drained

  • 3 tbsp olive oil

  • 3 tbsp warm water

  • 3 tbsp lemon juice

  • 14 cup tahini — optional

  • 14 cup Chipotle Aioli, prepared, optional

  • 1 tbsp Chipotle Aioli Mix

  • 1 cup light mayonnaise

  • 1 tsp lemon juice, optional

Instructions
  • Place couscous in a serving bowl.

  • Top with slaw, greens, and black beans. Add sweet potato, if desired.

  • Top with hummus and aioli, if desired. Serve.
