Mac & Cheese Jalapeño Poppers

Think you know jalapeño poppers? I’ll bet you’ve never seen them like this. It’s the best appy you haven’t met yet. Stuffed with extra cheesy mac & cheese, allow these poppers to steal the show at your next party. Safety tip: wear gloves when preparing the peppers—their oils can cause burns.

Ingredients

  • 2 cups uncooked macaroni noodles
  • 1 pkg Mac & Cheese Seasoning
  • 1 34 cups shredded cheddar cheese, divided
  • 13 cup milk, your choice
  • 1 tbsp butter
  • 12 jalapeños

Preparation

  1. Preheat oven to 425° F. Line Sheet Pan with Sheet Pan Liner.
  2. Cook pasta in a pot according to package directions. Drain and return to pot. Stir in seasoning, 1 cup cheese, milk, and butter.
  3. Meanwhile, slice jalapeños in half lengthwise. Remove seeds and membranes; discard. Place jalapenos in Multipurpose Steamer (it’s okay if they overlap). Cover; microwave on high 4 min, or until starting to soften.
  4. Arrange halved jalapeños on pan, cut side facing up. Spoon mac & cheese into jalapeños (you’ll use about 2 cups). Top each popper with 1⁄2 tbsp cheese.
  5. Bake 10 min, or until jalapenos are cooked and mac & cheese is starting to turn golden brown. Add toppings, if desired.

Tips

Big party? Double up on jalapenos—you'll have enough mac & cheese leftover to fill another batch. Bake on two separate pans.

If you want to cut down on dishes, instead of microwaving your jalapeños, arrange the halves, cut side up, on the pan and bake 15 min before spooning in the mac & cheese.
