Louisiana Chicken & Rice

Ingredients

  • 1 cup uncooked white rice
  • 2 cups water
  • 1 tbsp oil
  • 1 lb (450 g) boneless, skinless chicken breast fillets
  • 2 cups mixed frozen veggies
  • 2 tbsp Louisiana Seasoning or Cajun Fries Seasoning
  • 12 cup sour cream

Preparation

  1. Place rice and water in Multipurpose Steamer. Top with tray; microwave, uncovered, on high for 16–18 minutes, or until tender.
  2. Meanwhile, heat oil in Sauté Pan over medium-high heat. Add chicken fillets and cook 6–8 min. Stir in veggies and seasoning; cook for 4 min, or until veggies are soft. Remove from heat.
  3. When rice is cooked, add to the pan; stir to combine.
  4. Divide into 4 bowls. Top each bowl with 2 tbsp of sour cream and add toppings, if desired.
