Little Italy Rotini with Edamame Beans & Spinach

Ingredients

  • 1 lb (450 g) rotini or fusilli pasta
  • 1 cup frozen edamame beans or green peas
  • 2 cups spinach, washed and chopped
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 1 recipe prepared Little Italy sauce
  • 2 tbsp parmesan cheese, grated
  • juice of half a lemon
  • 1 tbsp olive oil

Preparation

  1. In a Multipurpose Pot, cook pasta according to package directions. Strain through built-in strainer lid, cover, and set aside.
  2. Lightly rinse edamame beans and spinach, season with Salt and Pepper, and place in Multipurpose Steamer. Cover and microwave for 2 minutes.
  3. Toss pasta with Little Italy sauce, parmesan, lemon juice, olive oil, and vegetables.
  4. Serve with extra parmesan, if desired.
