Little Italy Polenta Bites

Ingredients

  • 1 tbsp olive oil, divided
  • 2 23 cups low-fat milk
  • 1 cup polenta
  • 2 tbsp grated parmesan cheese
  • 12 cup Little Italy Sauce

Preparation

  1. Using a basting brush, lightly brush a 13 x 9-inch baking pan with olive oil. In Multipurpose Pot, bring milk to a simmer over medium heat. Simmer for 5 minutes.
  2. Using Piano Wire Whisk, whisk in polenta in a slow steady stream, return to simmer. Reduce heat to low, and add parmesan. Simmer until the polenta is very thick, whisking often, about 10 minutes.
  3. Turn polenta out into prepared pan and spread to 1⁄2 inch thick (don’t worry about making it perfect). Let it cool completely. When the polenta is cool, use a 1–2-inch round cutter to cut out 24–30 polenta rounds (as many as you can).
  4. Brush frying pan with olive oil.
  5. Over medium-high heat, sauté polenta rounds until they are lightly browned, about 1 minute on each side.
  6. Top each polenta bite, with a little dollop of Little Italy Sauce and serve.

Tips
