Light Potato Salad

This creamy, low-sodium potato salad has a ton of flavour.

Ingredients

  • 14 cup light mayonnaise
  • 14 cup light sour cream
  • 1 tsp Dijon-style mustard
  • 1 tsp Creamy Ranch Dip Mix or Caesar Dressing Mix
  • Black Pepper, freshly ground, to taste
  • 1 12 cups cooked diced potatoes, peels on
  • hard-boiled eggs, sliced, optional

Preparation

  1. In a large serving bowl, whisk first 5 ingredients together.
  2. Add potatoes and toss to combine.
  3. Top with sliced eggs (optional), and serve.
