This creamy, low-sodium potato salad has a ton of flavour.
Ingredients
1⁄4 cup light mayonnaise
1⁄4 cup light sour cream
1 tsp Dijon-style mustard
1 tsp Creamy Ranch Dip Mix or Caesar Dressing Mix
Black Pepper, freshly ground, to taste
1 1⁄2 cups cooked diced potatoes, peels on
hard-boiled eggs, sliced, optional
Preparation
In a large serving bowl, whisk first 5 ingredients together.
Add potatoes and toss to combine.
Top with sliced eggs (optional), and serve.
