Light Caesar Salad
Finally, a low-fat Caesar salad that doesn’t compromise on taste. Most Caesars can have up to 38 g of fat per serving. Epicure’s has only 2.5 g!
Ingredients
1 tbsp Caesar Dressing Mix
1 tbsp light mayonnaise
1 tsp Minced Garlic
1 1⁄2 tbsp lemon juice
2 tbsp low-fat milk
2 tbsp grated Parmesan cheese
Black Pepper, freshly ground, to taste
6 cups chopped Romaine lettuce
1⁄2 cup Garlic Croutons, or store bought
4 cups cubed crusty bread
2 tbsp olive oil
1 garlic clove, crushed
1 tbsp Herb & Garlic Dip Mix
2 tbsp grated Parmesan cheese
Preparation
In a large mixing bowl using a Piano Wire Whisk, whisk first 6 ingredients. Season with Black Pepper.
Add lettuce and toss to coat.
Stir in Garlic Croutons and serve.
