Light Caesar Salad

Finally, a low-fat Caesar salad that doesn’t compromise on taste. Most Caesars can have up to 38 g of fat per serving. Epicure’s has only 2.5 g!

Ingredients

  • 1 tbsp Caesar Dressing Mix
  • 1 tbsp light mayonnaise
  • 1 tsp Minced Garlic
  • 1 12 tbsp lemon juice
  • 2 tbsp low-fat milk
  • 2 tbsp grated Parmesan cheese
  • Black Pepper, freshly ground, to taste
  • 6 cups chopped Romaine lettuce
  • 12 cup Garlic Croutons, or store bought
  • 4 cups cubed crusty bread
  • 2 tbsp olive oil
  • 1 garlic clove, crushed
  • 1 tbsp Herb & Garlic Dip Mix
  • 2 tbsp grated Parmesan cheese

Preparation

  1. In a large mixing bowl using a Piano Wire Whisk, whisk first 6 ingredients. Season with Black Pepper.
  2. Add lettuce and toss to coat.
  3. Stir in Garlic Croutons and serve.
