Lemony Shrimp Skewers

Say hello to summer with these delicious skewers, bursting with fresh, citrus flavours! Shrimp are a low-calorie and low-fat protein, so they’re a great choice for weight management.

Ingredients

  • 2 bell peppers
  • 2 small zucchini
  • 1 small red onion
  • 1 bag (340 g/12 oz) frozen, peeled, raw jumbo shrimp, thawed
  • 12 pkg Lemon Garlic Chicken Seasoning
  • 2 tbsp olive oil
  • Toppings (optional): chopped cilantro, squeeze of lemon juice

Preparation

  1. Preheat grill to medium high heat. Lightly brush with oil.
  2. Chop peppers, zucchini, and onion into 1–2" pieces and place in a large bowl. Add shrimp, seasoning, and oil; toss to coat. Thread veggies and shrimp onto Grill Boss Skewers.
  3. Grill skewers 2–3 min per side, or until shrimp are bright pink and veggies are tender. Serve with toppings, if desired.
