Lemony Chickpea Salad

The nutty flavour and buttery texture of chickpeas make this salad both satisfying and nutritious.

Ingredients

  • 14 cup olive oil
  • 1 lemon
  • 1 tbsp Greek Dressing Mix, or Spinach Dip Mix
  • 1 can (14 oz/ 398 ml) chickpeas, rinsed and drained
  • 1 small red or green bell pepper, diced
  • 1 small onion, finely diced
  • 1 radish, optional
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Whisk together olive oil, lemon juice and dressing mix in a mixing bowl.
  2. Add chickpea, peppers, onions, and radish, tossing to coat. Season to taste with salt and pepper. Serve at room temperature.
